Ingredients:
100 grams dark chocolate (melted)
100 grams unsalted butter (melted)
2 tablespoons Marsala or Cointreau or similiar
2/3 cup caster sugar
2/3 cup ground almonds
1 tablespoon instant coffee powder
1 tablespoon hot water
3 eggs, separated
Strawberry Coulis
250 grams strawberries
2 tablespoons icing sugar (pure icing sugar that is gluten free).

Method:
1. Grease a 20cm round tin and cover base with baking paper
2. Combine melted chocolate and melted butter, add liqueur, sugar, almonds and coffee dissolved in hot water.
3. Stir in beaten egg yolks.
4. Beat whites until stiff (peaks) and fold into mixture.
5. Pour into prepared tin and bake in a moderate oven for 45 mins until firm.
6. Cool cake in pan and carefully turn onto serving plate. Dust with icing sugar. Serve with strawberry coulis.
Strawberry Coulis:
Blend or process strawberries and icing sugar plus a squeeze of lemon juice.
