Easy Pasta Carbonara

Serves 6

Once you have the prepared ingredients on your bench, this meal is very quickly produced. This is delicious although much lower in fat than traditional pasta carbonara. Use gluten free pasta and the meal is gluten free.

1 tablespoon olive oil
1 onion finely chopped
500 grams fettuccine
180 grams short cut bacon (lean)
trimmed of any fat and chopped
½ cup white wine
6 eggs
120 grams parmesan cheese
2 tablespoons chopped parsley
2 cloves of garlic
Salt, pepper to taste


1. Heat oil and fry onion until soft.
2, Add bacon and garlic and cook for 2-3 minutes.
3. Add wine and reduce by half.
4. In a bowl beat eggs and add cheese and parsley.
5. Meanwhile cook pasta in boiling water.
6. When cooked drain pasta thoroughly and quickly return to hot saucepan. Stir through the egg mixture so that the heat cooks the egg then add the bacon, onion and garlic.

Serve immediately with tossed green salad and crusty grainy bread.
